hey NML, would stacking fets on an es-01 prevent it from burning out on 6 cells? i bought an es-01 but im afraid of using it because it might burn out. is there any way to "upgrade" an es-01? thanks.

yes it can. I even put a 1/10th scale motor (no load, and only for a short time) on it with no problem.

The Fet's are to do with the esc, but I'd also like to know what they exactly do?

An esc is an Electronic Speed Controller. FETs are Field Effect Transistors. They act like electronic switches. BAE
