It makes sense that the gearing on the Mini-X is done by changing the spur (diff gear) and not the pinion.
This is due to the limitations of a fixed shaft drive with no adjustment. To fit a bigger pinion, you will need to shift the motor in order to leave sufficient clearance for gear meshing, otherwise the gears will mesh too tightly and not turn, like you described.
