No, you are right... most people just use the single speeds. And the slow speed is rather slow.

I do most of my racing on a small track. There is no way those single speed bits will stay in the corners I race on. And during the race, the car is never going it's slow speed. When I head into a turn, I lay off the boost and the car starts to deaccelerate. And as I come out of the turn, I hit the boost again. So the car isn't ever really going slow, it just slows down a bit for the turns. It is actually really cool to see it accelerate out of the turns.
