The only speed I produce that isn't on your list is the 3.2 motor. It's great for shorter drag race tracks because it gets off the line quicker than the the 3.8, but has more top end speed than the 3.0. I agree with the applications you've listed for the other speeds.
I personally feel that the 2.6 is the fastest motor for OEMs and the Zip Zaps. These cars need the extra torque produced by the 2.6 to get moving from a dead stop. I know some people are running 3.8s in their OEM cars but I've had people send back 3.8s because they just wouldn't work well for them. The Tomy Bit Char-g and Hobbico Microsizers run all the speeds very well.
